Apple Cinnamon Muffins

Did anyone else get locked out of blogger for the past few days? I'm glad to be back.

Delicious :-)

I tried out the new Kitchenaid mixer  that my parents gave me this week! I made Apple Cinnamon Muffins, and they were delish!

Here is the recipe I used:

Apple Cinnamon Muffins

Ingredients

  • 1 1/2 cups all-purpose flour
  • 3/4 cup white sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/3 cup vegetable oil
  • 1 egg
  • 1/3 cup milk
  • 2 apples - peeled, cored and chopped
  • 1/2 cup white sugar
  • 1/3 cup all-purpose flour
  • 1/2 cup butter, cubed
  • 1 1/2 teaspoons ground cinnamon
  • chopped walnuts (optional

Directions

  1. Preheat oven to 400 degrees F (200 degrees C). Grease six muffin cups or line with paper muffin liners.
  2. Stir together 1 1/2 cup flour, 3/4 cup sugar, salt, baking powder and 1 teaspoon cinnamon. Mix in oil, egg and milk. Fold in apples. Spoon batter into prepared muffin cups, filling to the top of the cup.
  3. In a small bowl, stir together 1/2 cup sugar, 1/3 cup flour, butter and 1 1/2 teaspoons cinnamon and chopped walnuts. Mix together with fork and sprinkle over unbaked muffins.
  4. Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into center of a muffin comes out clean.

Fashionista

I also got to see Lacey of Lacey in the City this week. I wish she and Mikey lived closer, since they are one of my favorite couples in the whole world :-) We got coffee at Freedom of Espresso, an independent coffee place in Syracuse.

Lacey is a fashionista, and I am jealous. I need to go shopping with her. She works for Lodis, which has amazing patterns for handbags, wallets, etc. Check out some of these styles:

Which patterns do you like?

Have a nice, long weekend, everyone!

    Allie in the City

Great weekend in NYC. Usually when Tim and I go, we have something big planned: Yankee's Game, show, zoo, etc. This time, it was all about relaxing and seeing friends.

After arriving on Friday night, we spent all day Saturday in the city. We hit a few bars for the SU game and time before dinner:
Mikey met up with us at the Blarney Stone.

    Brian (hiding) me and Tim

We found this bar called "The Junction" where beer pong is encouraged.

We went to Rare for dinner. Definitely recommend the
parmesan truffle fries, sweet potato fries, and waffle fries.
I got to see LITC at Rare :-)

We went to The Ginger Man after dinner.
Tried an interesting drink: Hoegaarden and Framboise.

Sunday morning we headed out and stopped to see Heather's new place - Gorgeous. She made us brunch. Bagels, Coffee, Homemade Hummus. Yummmy!

Great trip. Home in time for the superbowl :-)

    Powder

Mikey and Lacey came to visit this weekend. Good times.

We went to Labrador Mountain so that Lacey could learn to ski before she and Mike go to Vermont next weekend. The conditions were amazing. Hardly any ice. A rarity for CNY.

    A photo of Lab

This is the kind of snowboard I ride, a K2 Lunatique. Tim just got it for me with
awesome Ride bindings for Christmas. Love this board <333

Mikey and Lacey at the bar at Lab. Special on Yuengling Light, $2.50 drafts, yummm.
That guy behind Lacey = solo person who took the corner in a crowded bar = party foul.

Can't wait to see these two again soon xoxo

Color and Adventure on a Cloudy Day

    Image from Syracuse University http://students.syr.edu/scis/Daniela_SCIS%20News2/SU%20Winter.JPG
"So she sat on, with closed eyes, and half believed herself in wonderland, though she
knew she had but to open them again, and all would change to dull reality"

Inspired by LaceyInTheCity, I have decided to start a blog. After a few days of consideration, I've decided to call it "Allie in Wonderland," and Tim (husband), MikeyD (friend), and Lacey (inspiration) thought it was a good title, so that works for me.

Why wonderland? Because it's everyday life, but seeing it with a little more color and adventure.

Example: Syracuse is snowy, cold, and cloudy. But because of all that, we get days like the one you see in the picture above.

So it's those moments of color and adventure in an otherwise dull setting that I want to write about in this blog, and I'll try to capture it all through images, quotes, and stories.
